Mum's Spaghetti Sauce

3 medium white onions
1 cup celery
1/4 cup green pepper

1 or 2 pound minced (ground) beef (start with 1 pound)

1 pound minced pork (optional)

1 tray of sausages (1/2 a roll of jimmy dean sausage)
skinned and made into small balls then fried.
cook until meat loses pinkness

1 large can of diced tomatoes
2 or 3, 6 oz cans of tomato paste

I use dried spices for these:
1 teaspoon sugar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon thyme
1 teaspoon paprika
1 teaspoon basil
1 teaspoon allspice
1 teaspoon celery salt
1 teaspoon curry powder
1 teaspoon sage
1 teaspoon rosemary
1 teaspoon cayenne pepper
1 teaspoon pickling spice
1 teaspoon chilli powder
1 teaspoon oregano
1 teaspoon tarragon
1 teaspoon garlic powder
1 teaspoon coriander seeds
1 teaspoon crushed red pepper

2 tablespoon parsley

3 Bay leaves

4 - 6 cloves garlic (pressed or diced, don't pan fry)

3 good dashes of tabasco
asian red pepper paste (add to taste, don't add too much)
4 whole cloves (put in a spice bag with bay leaf)

1 box of cremini mushrooms

add ingredients except for beef and fresh vegetables to a very large pot or crock pot.
simmer and stir occasionally for 2 hours.

pan fry the beef and pork and add to the sauce in the pot.

add 1 to 3 jars of pasta sauce (the ones the glass jar)
i use a tomato mushroom or tomato garlic sauce.
add jars to determine if you want to have more or less tomato flavor.

add vegetables an hour before serving if you want crunchier texture.

extra sauce can be frozen and over time, the sauce gets spicer.
